Spicy Sweet Potato and Carrot Soup
Creamy, satisfying and full of flavors, this quick soup is perfect for a weeknight meal.

I don't often create recipes, that's because I tend to do a lot of ad-libs when it comes to cooking—swapping out ingredients that I don't have or modifying recipes for certain purposes.
Through Nourish & Treat, I hope to instil that skill in you. On Saturday, my daughter and I were doing our usual market shop. It was cold, so we decided to grab a cup of hot soup. It was Spicy Sweet Potato. I was blown away by how tasty it was. It was like drinking a warm hug. It gave a new meaning to how food can positively impact us.
I didn't have the recipe, so I decided to try to re-create it. Here it is. In this recipe, I'll give you the quantities I used and some suggestions below if you would like to optimise it for certain nutritional needs. Feel free to switch things up and experiment with it.
The quantities make quite a big batch. I wanted leftovers to freeze for the week. So here we go. Our first recipe on N&T!
Spicy Sweet Potato and Carrot Soup
Prep Time 15 minutes | Cook time 30 minutes | Serves 6 to 8

Ingredients
1 Onion, roughly cut
3 cloves of garlic, peeled and sliced (garlic powder is also good)
Olive Oil (a good dash)
4 Carrots, peeled and roughly cut
3 Sweet Potatoes, peeled and cut into 1-2 inch chunks
2 Litres of water
1 - 2 Tablespoons of stock, I used Massel Chicken stock
2 tsp of Cumin Powder
1/2 tsp of Ground Ginger
Sprinkle of Chili Flakes
2 tbsp Sour Cream, or Quark, or Cream (optional)
Salt and Pepper to taste
Method
- Add a good dash of oil (I used olive oil), onions and garlic to the saucepan and cook until soft and slightly brown
- Add sweet potato and carrots
- Add water
- Add stock powder, cumin, ginger, salt and some pepper.
- Bring to a simmer for about 30 minutes until the vegetables are soft and cooked.
- Once cooked, blend the soup until it is a smooth consistency.
- Stir through sour cream and season with salt and Pepper to taste.
