A Delicious Bean & Bacon Salad Recipe


Do you have a few odds and ends ingredients sitting in your fridge and pantry? No idea what to make for lunch? This quick salad is made from random ingredients and will show you how to make a delicious meal out of what you have on hand.


Bean and Bacon Salad Recipe


I was supposed to go out grocery shopping today. The cupboards look bare. But I'm still on the tail-end of having had Covid so that's a good reason to remain at home!

As lunch-time rolled around, I didn't feel like any of the leftovers in the fridge. I felt like something fresh. I love butter beans, so that became my base ingredient. Next, I looked for an element that would add some extra flavour. We had some rashers of bacon left that I could cut fine and add a little. 

After that, it was whatever I could scrape up. What's excellent about celery and carrot is these vegetables last a long time if stored right, so they were nice and crisp relative to some of the other sad-looking veggies I had available. I used olives to add saltiness and tinned corn for sweetness. 

I was delighted at how this random salad turned out. There's no lettuce, given it's so expensive right now. Here is the recipe below. Give it a try sometime. 

 

Bean & Bacon Salad

Preparation 10 minutes | Servings 2

Equipment

Mixing bowl 

Large spoon

Small saucepan

 

Ingredients

1 360g can Butter Beans

2 rashers of short-cut bacon chopped finely

1 stalk of celery cut finely

1 carrot grated

1/4 cup pitted kalamata olives

1/3 cup of tinned corn

Dash of sesame oil

Dash of vinegar (I used apple cider vinegar but white wine vinegar would work well too) 

 

Method

  1. Add butter beans to the mixing bowl
  2. Fry the bacon until it's lightly golden and add to the bowl
  3. Add celery, carrot, kalamata olives, and tinned corn
  4. Drizzle over some sesame oil, and vinegar, 
  5. Toss the salad, serve and enjoy.
